potato latkes printable recipe

ingredients:

four medium sized russet potatoes

one small sweet onion

2 Tablespoons of whole wheat flour

2 teaspoons of minced garlic

salt and pepper

(for topping: sour cream or apple sauce!)

directions:

1. place cookie sheet, ungreased, in 450 degree oven.

2. clean and peel potatoes and onion.

3. using a coarse grater, grate the potatoes. once they are all shredded, try to squeeze out all the excess water you can — first squeeze over the sink and then try to wrap in a paper towel.

4. using a finer grater, grate the onion and try to remove excess water, as well.

5. mix the two in a bowl with egg (lightly scrambled), salt, pepper, garlic and flour, until all the potatoes are coated.

6. remove the cookie sheets from the oven and spray with nonstick spray.

7. spoon potato mixture onto sheet in a flat, pancake shape.

8. bake for 10 minutes at 450 degrees, remove from oven. spray the “raw” side with nonstick spray and flip the latkes over. bake for another 8 minutes.

9. remove them and eat them before they get cold! top with apple sauce, sour cream or eat them plain. tip: when you reheat them, put them in a toaster oven or oven, but don’t reheat in the microwave or else they’ll be soggy.
