pea pesto printable recipe

ingredients:

1 1/2 cups frozen peas, defrosted

2 garlic cloves

1/4 cup grated parmesan cheese, plus 2 Tablespoons for crostini

pinch kosher salt

pinch black pepper

3-4 Tablespoons olive oil, plus an add’l Tablespoon for crostini

baguette, sliced into 1/2” thick slices

pinch garlic powder

grape tomatoes, halved

directions:

1. slice the baguette into 1/2” thick slices, brush lightly with olive oil, sprinkle with garlic powder and parmesan. bake in a 250 degree oven for about 5 minutes or until lightly golden.

2. while the bread is baking, pour the defrosted peas into a food processor and pulse for about a minute. then add the cheese, garlic, salt, pepper and olive oil and continue to blend until well-combined. set aside.

3. slice all your cherry tomatoes in half - one half for each slice of bread.

4. when you remove the slices of bread from the oven, place them on a plate and begin to spoon about two heaping Tablespoons of the pesto on top of them, garnishing with the half cherry tomato.
