lemony chicken & orzo printable recipe

ingredients:

3 boneless, skinless chicken breasts, cut into 1” pieces

1/2 teaspoon salt

1/2 teaspoon pepper

1 can low-sodium chicken broth (14.5 oz)

1/3 cup lemon juice (plus lemon for garnish, optional)

2 teaspoons honey

3/4 cup orzo

1 cup fresh green beans, cut into 1” pieces

1 red bell pepper, cut into 1” pieces

2 cups water

instructions:

1. to prep, cut your chicken, green beans and bell pepper all into 1” pieces.

2. pour the broth and lemon juice into a big pot or dutch oven. bring to a boil and add the chicken, salt and pepper. cover, reduce heat to medium and cook for about 9-10 minutes or until the chicken is cooked.

3. remove chicken from the pot and set aside.

4. bring the heat back up to high, let it cook for five minutes and then whisk in honey.

5. add the 2 cups water to the pot and bring to a boil. pour in the orzo and cook for 10 minutes or until the orzo is tender. most of the liquid should be absorbed and the pasta should be more voluminous.

6. add the green beans, bell pepper and chicken and let it simmer for about 5 minutes before serving.
